offers a hands-on weekend workshop covering the making and using of:
- Yoghurt, kefir, clabbered milk
- Cheese making (feta and mozzarella types)
- Sourdough bread
- Traditional bone broths
- Flavoured vinegars
- Chutney, relish, pickle and sauce
- Fruit bottling – overflow and oven methods. Low-sugar options.
- Jam alternatives
- Ghee/good fats
- Sprouting, soaking grains and nuts
- Smoothies
- Lacto fermented vegetables (eg sauerkraut) and drinks like kombucha, kvass
- Use of dehydrators (or oven) to make delicious snacks like Crispy Nuts, Chia Crackers, Coconut Chews, Kale Chips etc
- Garden salads including edible flowers
and low carb/gluten-free bread options
. Make simple handsalves, and beeswax food covers
☼Lots of tasting opportunities as we make these! Also try some other homemade products like pickled walnuts, nocino, pate. Sample seasonal fruit/vegetable juices and egg nog smoothies for a fast morning start.
☼Take home your own starters for yoghurt, kefir, kombucha and sourdough
☼Take home samples of the products you will make and recipes
☼We will discuss nutrient-dense food including healthy fats and the importance of good food and water
Cost, covering tuition, ingredients (organic/local as much as possible), folder of recipes, starters and samples is $290. Numbers are limited to 12 participants. (Minimum 8 people.) Morning tea, lunch, and afternoon tea will be at no extra charge
Saturday night:An optional extra is to enjoy a meal with the other course participants at a local restaurant
Farmstay accommodation is available at Gary and Emily Williams’ organic farmstay (bring own linen and breakfast) $25/night. Pip also has some accommodation.
Both days run from 9.30am – 4.30pm
